Gordon Ramsay calls Beef Wellington an “impressive dish” and the dish’s history is almost as thrilling as the finished product. The history is frequently disputed, but it is generally agreed that the dish was created in celebration of the first Duke of Wellington, Arthur Wellesley, and his victory at the Battle of Waterloo on June 18 1815. I made a beef wellington that even Gordon Ramsay would approve of -- if this isn't a pure display of true culinary chops I don't know what is! I'll let my welly speak for itself - enjoy the reveal!

Beautifully browned pastry - how does the inside look though?
Look at that perfectly cooked beef tenderloin!!
And, plated up with scalloped potatoes and asparagus! Superb presentation if I do say so myself.
